Another sneaky recipe from my new Thermomix recipe book.
Enjoy this one, its afternoon delightful!
430 g Organic Spelt flour
2 tsp baking powder
1.5 tbspn apple cider vinegar
2 tablespoons coconut sugar (or 1 tbsp stevia)
200 g canned coconut cream
125 g cold water
200 g pitted medjool dates
Place coconut sugar in bowl for 10 sec at speed 9. If using stevia; skip this step.
Place flour, stevia (if using), baking powder, apple cider vinegar, coconut cream, & water into the bowl then mix for 10 seconds on speed 6 to combine.
Add chopped pitted dates (1cm pieces)
Set TM to knead for 1 minute
Place mixture onto lightly floured surface and press out until 2cm thick.
Cut into rounds using a 4cm round cutter (drinking glass will do).
Bake in 200 degree Celsius oven for 15 minutes or until golden brown and cooked through.
Serve warm with whipped aquafaba or whipped coconut cream and fruit of your choosing
