Mush Tofu - A Cruelty Free Scramble Thermomix Recipe

I am developing a vegan thermomix recipe book, here is a sneak peak at one of my creations... Hope you all enjoy!

 

Ingredients:

 

1 brown onion

2 Tblsn Olive Oil/Coconut oil

2 Garlic Cloves

2 Packets of 300g Organic Hard Tofu (or 600g)

4 Table Spoons Nutritional Yeast

3 Table Spoons Gluten Free tamari

1 Tea Spoon Organic Turmeric

2 Table Spoons Chopped Chives

1 Bunch of Chopped Organic Broccolini (1.5-2cm pieces)

6-8 Organic Cherry Tomatoes chopped in half

Large Handful of Organic Baby Spinach

4 -5 Large Mushrooms chopped

 

Method

  1. Break tofu into pieces, place in mixing bowl 3 seconds speed 7.

  2. Empty mixing bowl & place scrambled tofu into a container temporarily

  3. Peel Onion & Garlic – Place in bowl 3 Secs Speed 7.5

  4. Scrape Down sides of bowl

  5. Add coconut oil and chopped broccolini.

  6. 3mins, 115 degrees, Speed 2 reversed

  7. Add scrambled tofu, chopped tomatoes & chopped mushrooms

  8. 3mins, 115 degrees, Speed 2 reversed

  9. Add nutritional yeast, tamari turmeric, chives

  10. 5 mins, 110 degrees, Speed 2 reversed

  11. Add baby spinach (15 seconds, Speed 4 reversed)

  12. Serve as desired

 

Serving Ideas:

Serve on Toast with avocado and Grilled Mushroom

Use as a sushi filling with avocado

Use as sandwich filling with Lettuce or salad of choosing

Complement a main meal as a side dish
